Dreamy Orange Cream Puffs
Makes 6 servings
|3/4||cup granulated sugar|
|1-1/2||cups orange juice|
|3||egg yolks, beaten|
|1||cup plain low-fat yogurt|
|1/2||teaspoon almond extract|
|1||can (11 ounces) mandarin oranges, drained|
- Prepare Cream Puffs.
- Combine sugar, cornstarch and orange juice in medium saucepan. Cook over medium heat until bubbly, stirring often. Cook 2 minutes; remove from heat. Gradually stir half of hot mixture into egg yolks. Return to saucepan; bring to a boil over medium-high heat. Reduce heat to low and cook 2 minutes; remove from heat. Stir in yogurt, butter and extract.
- To serve, spoon filling into bottoms of cream puffs. Pile orange sections on top of filling. Add cream puff tops. Lightly sift powdered sugar over tops.
