Dreamy Orange Cream Puffs

INGREDIENTS

Cream Puffs (recipe)
3/4 cup granulated sugar
3 tablespoons cornstarch
1‑1/2 cups orange juice
3 egg yolks, beaten
1 cup plain low-fat yogurt
2 tablespoons butter
1/2 teaspoon almond extract
1 can (11 ounces) mandarin oranges, drained
Powdered sugar

PREPARATION:

  1. Prepare Cream Puffs.
  2. Combine sugar, cornstarch and orange juice in medium saucepan. Cook over medium heat until bubbly, stirring often. Cook 2 minutes; remove from heat. Gradually stir half of hot mixture into egg yolks. Return to saucepan; bring to a boil over medium-high heat. Reduce heat to low and cook 2 minutes; remove from heat. Stir in yogurt, butter and extract.
  3. To serve, spoon filling into bottoms of cream puffs. Pile orange sections on top of filling. Add cream puff tops. Lightly sift powdered sugar over tops.
