Easy Halibut Steaks with Tomato and Broccoli Sauce

Makes 4 servings

Ingredients

2 tablespoons olive oil
2 cups chopped fresh broccoli
2-1/2 cups diced fresh tomatoes
2 tablespoons lemon juice
1 tablespoon chopped garlic
1 tablespoon fresh tarragon or 1 teaspoon dried tarragon
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
4 halibut steaks (4 ounces each)

Preparation

  1. Heat oil in large skillet over medium heat 1 minute. Add broccoli; cook 5 minutes. Add remaining ingredients except halibut; cook 5 minutes, stirring occasionally. Add halibut, cover and cook 5 minutes on each side.
