Easy Oriental Chicken Sandwich
Makes 4 servings
|1/4||cup peanut butter|
|2||tablespoons light soy sauce|
|1/2||teaspoon garlic powder|
|1/2||teaspoon ground ginger|
|4||boneless skinless chicken breasts (about 1-1/4 pounds)|
|4||onion or kaiser rolls, split|
|1||cup sliced cucumbers|
|1||cup bean sprouts|
|1/4||cup sliced green onions|
- Preheat oven to 400°F. Combine peanut butter, honey, soy sauce, garlic powder and ginger in large bowl; stir until well blended. Reserve 1/4 cup peanut butter mixture.
- Place chicken on foil-lined baking pan. Spread remaining peanut butter mixture over chicken. Bake 20 minutes or until chicken is no longer pink in center.
- Fill rolls with lettuce, cucumbers, bean sprouts and chicken; sprinkle with green onions. Serve with reserved peanut butter mixture.
