On the farm growing up, we ate beef just about everyday, for every meal and if we could have, we would have drank it. I still like beef, but nowadays I'm pretty reticent to eat the stuff. If I'm at a barbecue or a picnic and someone hands me a hamburger, I'm not going to let it go to waste, but I don't go out of my way to purchase beef products. Why?

Beef has the largest carbon footprint of all the foods. According to Creative Citizen, you can reduce your CO2 emissions by 3,028 pounds and save 207,920 gallons of water by eating beef only once a week. Those numbers are ridiculous. That's more than two round trips from Los Angeles to New York (depending on the airline). Cutting down on beef is an easy way to reduce your CO2 impact, and it's healthy to eat less red meat. It's a win/win situation.

I know that in some places it is uncool to not eat meat of any sort. Here's a little tip. If a nay-sayer asks why you aren't eating beef, just tell them that you are extremely worried about your colon. No one will make fun of you for that. ;)
