Cindy is a holistic counselor who loves to eat locally grown, organic foods. The problem is her fiance is a meat and potatoes kind of guy. In the Healthy Me, Healthy You episode of Emeril Green, Chef Emeril shows Cindy how to combine her love of healthy eating with her fiancé?s love for hearty meats and cheeses.

Emeril recommends that Cindy pick foods that are both healthy and hearty:

1. Choose a fresh mozzarella that's high in calcium and contains only 60 calories and 4.5 grams of fat, much less than many other denser cheeses.

2. Buffalo is similar to beef but much leaner. It has less fat than chicken and no antibiotics or hormones.

3. Chili is another hearty option. Consider a three bean chili made with black beans, pinto beans, and kidney beans. The darker the bean the more antioxidants. Add tons of fresh local produce including collards, kale, cilantro, portabellas, and poblanos for more bulk and nutrients.
