INGREDIENTS
| 1 Cup | Amaranth |
| 1 cup | water |
| 2 tablespoons | olive oil |
| 2 tablespoon | basil, chopped |
| Salt and pepper to taste | |
PREPARATION:
- Simmer amaranth in water for 12-15 minutes. Remove from heat and add olive oil, basil and salt and pepper.
- Serve warm or at room temperature.
