Emeril's Amaranth With Basil and Olive Oil

YIELD 2 cups

INGREDIENTS

1 Cup Amaranth
1 cup water
2 tablespoons olive oil
2 tablespoon basil, chopped
Salt and pepper to taste

PREPARATION:

  1. Simmer amaranth in water for 12-15 minutes. Remove from heat and add olive oil, basil and salt and pepper.
  2. Serve warm or at room temperature.
