Emeril's Asian Style Mussels Meuniere
INGREDIENTS
| 1 tablespoon | olive oil |
| ¼ cup | minced shallots |
| 3 tablespoons | chopped garlic |
| 1 tablespoon | minced ginger |
| 2 | Serrano chile peppers, seeded and minced ¼ cup cilantro leaves |
| 2 cups | a light, citrus flavored beer or Pale Ale Beer |
| 2 dozen | live mussels, scrubbed and de-bearded |
| French Bread for Serving | |
PREPARATION:
Method
- In a saute pan, heat the olive oil. When the oil is hot, saute the shallot, garlic, ginger and Serrano pepper. Add half of the cilantro leaves, beer and the mussels. Cover and simmer the mussels for 5 to 8 minutes or until the shells open. Discard any shells that do not open. Stir in the remaining cilantro and divide the mussels between 2 bowls.
- Serve with hot, crusty French bread.
