Emeril's Basic Pizza Sauce

YIELD About 2 1/2 quarts

INGREDIENTS

1 tablespoons olive oil
3/4 cup chopped yellow onions (1 medium yellow onion)
1/2 teaspoon minced garlic (2 cloves garlic)
1/4 teaspoon salt
4 1/2 teaspoons tomato paste
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon crushed red pepper
1/8 teaspoon ground black pepper
1 can whole peeled tomatoes (28-ounce)
1 can tomato sauce (15-ounce)
1 cup water
1/2 teaspoon sugar

PREPARATION:

  1. In a medium saucepot, heat the oil over medium heat. Add the onions, garlic, tomato paste, salt, basil, oregano, crushed red pepper, and black pepper, and cook, stirring, until soft, 5 minutes.
  2. Place the tomatoes in a large bowl and squeeze to break into small pieces. Add the tomatoes, water, and sugar to the pot and stir well. Bring to a simmer over medium-high heat.
  3. Lower the heat to medium-low, and simmer uncovered for 45 minutes, stirring occasionally with a heavy wooden spoon.
  4. Use as a sauce for pasta or pizza.
