Emeril's Brussels Sprouts

YIELD 4 to 6 servings

INGREDIENTS

1 pound Brussels sprouts, stems trimmed, halved
2 tablespoons olive oil, or more to coat
1 teaspoon salt
1?2 teaspoon freshly ground black pepper

PREPARATION:

  1. Preheat the oven to 375 degrees F.
  2. Toss the Brussels sprouts in olive oil to coat and season with salt and pepper to taste. Transfer to a sheet pan and spread in one even layer.
  3. Roast until crisp-tender and lightly caramelized around the edges, 20 to 25 minutes.
  4. Remove from the oven and serve with the roasted turkey breast and sweet potatoes.
