Emeril's Caprese Salad

YIELD 6 servings

INGREDIENTS

3 large heirloom or beefsteak tomatoes, sliced
1/2 pound fresh mozzarella cheese, sliced
1 cup basil leaves
3 tablespoons extra virgin olive oil
Salt and freshly ground black pepper

PREPARATION:

  1. Layer the slices of tomato, cheese and basil on a platter, making sure to lightly salt and pepper each layer. Repeat until all the tomatoes are layered and then drizzle with olive oil. Serve immediately.
