Emeril's Caramelized Tuna Steaks

YIELD 1 tuna steak

INGREDIENTS

1 tuna steak
2 teaspoons cracked black pepper
2 teaspoons kosher salt
1 cup Turbinado sugar
1 lime, juiced
Green onions, sliced for garnish
(6 to 7-ounce)

PREPARATION:

Method:

  1. Press the cracked pepper and salt into the tuna steaks. Pour the turbinado sugar onto a plate. Press the tuna steak into the sugar.
  2. Heat a dry non-stick skillet to medium high heat. Sear the tuna steak in the pan until sugar has caramelized, 30 to 60 seconds. Turn the tuna and caramelize on the other side, about 20 seconds.
  3. Transfer tuna to a plate. Squeeze lime juice over fish and garnish with green onion slices.
