Emeril's Carrot Cake with Neufchatel Icing
YIELD 12 servings
INGREDIENTS
| 2 1/3 cups | unbleached all purpose flour |
| 4 teaspoons | baking powder |
| ½ teaspoon | baking soda |
| 1 teaspoon | ground cinnamon |
| 1 teaspoon | ginger |
| ½ teaspoon | nutmeg |
| 1/4 teaspoon | cardamom |
| 1 teaspoon | salt |
| 2/3 cup | granulated sugar |
| ½ cup | canola oil |
| ½ cup | applesauce |
| 1 cup | light brown sugar |
| 5 | eggs |
| 2 teaspoons | vanilla extract |
| 7 cups | grated carrots |
| Frosting | |
| 1 pound | Neufchatel cheese |
| 7 ounces | non-fat Greek style yogurt |
| 2 ½ cups | confectioners sugar |
| 2 teaspoons | lemon juice |
| ½ teaspoon | vanilla |
PREPARATION:
Method
- Preheat the oven to 350 degrees F.
- Grease and flour one 9x13 rectangular cake pan or two 9-inch round cakes pans. Invert
- the pan and tap out excess flour.
- In a large bowl, whisk the flour, baking powder, baking soda, cinnamon, ginger, nutmeg,
- cardamom and salt and set aside.
- Combine the sugar, canola oil, applesauce and light brown sugar and whisk well to
- combine. Add the eggs one at a time, thoroughly incorporating each egg before adding
- the next addition. Whisk in the vanilla. Add the flour mixture, stirring gently until just
- combined and then mix in the carrots.
- Pour the batter into the pan; smooth the surface with a rubber spatula. Bake until the cake
- feels firm in the center or when a skewer inserted in the center of the cake comes out
- perfectly clean, 35 to 40 minutes. Transfer the cake to a wire rack and cool for at least 10
- minutes. Invert cake onto a wire rack and then reinvert cake onto a wire rack or cake
- plate. Cool completely before frosting.
To make the frosting
- Beat the Neufchatel and yogurt with a hand mixer for 3 to 4 minutes or until the mixture
- is homogenized. Add the confectioners? sugar, lemon juice and vanilla and beat until well
- blended, another 2 minutes. Frost the cake and cut into slices and serve. The cake may be
- refrigerated but should be brought back to room temperature before serving.
