Emeril's Cranberry Merlot Sauce

INGREDIENTS

2 cups cranberries
1 cup raspberry merlot, or other fruity wine
1/2 cup red onion, finely chopped
1/2 cup superfine sugar
1/2 cup chicken stock
1 orange, juiced and zested

PREPARATION:

Method

  1. Combine all ingredients in a small saucepan. Bring to a boil, then reduce heat to a simmer. Simmer for 15 to 20 minutes, or until cranberries have broken down and the sauce thickens.
