Emeril's Crock Pot Sausage and Peppers
YIELD 2 servings
INGREDIENTS
| 4 | links Sausage, hot or sweet, casing removed |
| 1 | large onion, sliced |
| 1 | red Pepper, sliced |
| 1 | green pepper, sliced |
| 1 28‑ounce can | crushed tomatoes |
| 2 cups | low sodium chicken broth |
| 1/2 pound | egg noodles, cooked |
PREPARATION:
Method:
- Place sausage in a slow cooker. Scatter the onions, and peppers over top of the sausage. Add in the canned tomatoes and chicken broth. Cover the slow cooker and set the temperature to high. Cook for 2 hours, undisturbed.
To Serve:
- Stir egg noodles into the sausage and peppers. Serve in bowls, garnish with Parmesan cheese.
