Emeril's Double Bag Poached Pears
YIELD 4 dessert servings
INGREDIENTS
| 1 bottle | Double Bag Long Trail beer |
| ½ cup | Woods Cinnamon Boiled Cider |
| 2 | cinnamon sticks |
| 2 pods | star anise |
| 3 tablespoons | honey |
| 4 Seckle | pears, split lengthwise and cored |
| Pinch of salt | |
| 4 scoops | vanilla ice cream |
PREPARATION:
- In a medium sauté pan over medium heat, add the beer, cinnamon boiled cider, cinnamon sticks, star anise and honey. Bring the liquids to a boil and add the pears and pinch of salt. Reduce the heat to medium low and simmer the pears for 20 minutes or until the pears are soft. Remove the pears to a bowl and cover to keep warm. Turn the heat back to high and reduce the beer for another 10 minutes or until the mixture is syrupy. Place a scoop of the ice cream in a bowl and top with two pear halves. Drizzle with the beer syrup and serve immediately.
