Emeril's Fish In A Foil Pouch

YIELD 4 servings

INGREDIENTS

Fish In A Foil Pouch:
4 fillets Haddock, Cod, Striped Bass
1 teaspoon finely grated lemon zest
1/2 teaspoon finely grated orange zest
1/2 teaspoon finely grated lime zest
2 tablespoons RV Livin? Spice Blend, recipe follows
1 small sweet onion, sliced crosswise into thin rings
3 small yellow squash, thinly sliced into rounds
3 small zucchini, thinly sliced into rounds
1 small fennel bulb, cored, thinly sliced lengthwise
1 cup seeded and chopped fresh tomatoes
1/4 cup plus 2 tablespoons extra virgin olive oil
8 basil leaves
RV Livin' Spice Blend:
1 tablespoon rosemary
1 tablespoon anise seed
2 tablespoons brown sugar
2 tablespoons kosher salt
1 tablespoon basil
1 tablespoon oregano
1 tablespoon thyme
1 teaspoon crushed red pepper flakes
(6-ounce)

PREPARATION:

Fish In A Foil Pouch:

  1. Preheat the oven to 375 degrees F.
  2. Combine zest with spice blend. Spread the spices evenly on both sides of each fish fillet.
  3. Fold four 14-inch squares of heavy-duty aluminum foil in half forming 4 rectangles. Assemble the packets by dividing ingredients evenly. Place onions in a single layer, followed by the squash, zucchini, and fennel. Place the fish on top; add tomatoes and drizzle with olive oil.
  4. Garnish with basil leaves. Fold foil over ingredients; seal the edges by folding or crimping.
  5. Place the packets on a baking sheet and place in the oven. Cook, undisturbed, until fish is just cooked through and flakes easily, 18 to 20 minutes, depending on the thickness of the fillets.

To Serve:

  1. Remove from grill. Open packets carefully, and transfer to wide, shallow serving bowls.

RV Livin' Spice Blend:

  1. In a spice grinder, grind the rosemary and the anise seed into a powder. Transfer to a small bowl and whisk in remaining ingredients. Store on a tightly covered jar. Use as you would any seasoning.
