Emeril's Fruit Salad with Ginger Honey Yogurt Sauce
YIELD 4 servings
INGREDIENTS
| 2 cups | vanilla low-fat yogurt |
| 1 tablespoon | honey |
| 1 teaspoons | grated ginger |
| 1 1/2 teaspoons | grated lime rind |
| 1 | medium pineapple, cubed (about 3 cups) |
| 1 | papaya, cubed (about 1 cup) |
| 1 | mango, cubed (about 1 cup) |
| 1 | medium banana, sliced |
| 1/4 cup | sliced almonds, toasted |
| 1 pint | mango acai sorbet, or sorbet of your choice |
PREPARATION:
Method
- Combine yogurt, honey, ginger and lime rind in a small bowl. Combine pineapple, papaya, mango in a large bowl; toss gently to combine. Just before serving, stir in the banana. Stir together fruit mixture with yogurt sauce; sprinkle with almonds. Divide the mixture between 4 bowls and top each fruit salad with a scoop of acai sorbet. Serve immediately.
