Emeril's Fruit Salad with Ginger Honey Yogurt Sauce

YIELD 4 servings

INGREDIENTS

2 cups vanilla low-fat yogurt
1 tablespoon honey
1 teaspoons grated ginger
1 1/2 teaspoons grated lime rind
1 medium pineapple, cubed (about 3 cups)
1 papaya, cubed (about 1 cup)
1 mango, cubed (about 1 cup)
1 medium banana, sliced
1/4 cup sliced almonds, toasted
1 pint mango acai sorbet, or sorbet of your choice

PREPARATION:

Method

  1. Combine yogurt, honey, ginger and lime rind in a small bowl. Combine pineapple, papaya, mango in a large bowl; toss gently to combine. Just before serving, stir in the banana. Stir together fruit mixture with yogurt sauce; sprinkle with almonds. Divide the mixture between 4 bowls and top each fruit salad with a scoop of acai sorbet. Serve immediately.
