Emeril's Ginger Peach Green Tea Cooler

INGREDIENTS

6 cups cold water
6 green tea teabags, decaffeinated
1 inch piece of ginger, thinly sliced into rounds
1/3 cup honey
2 cups sliced peaches, fresh or frozen
2 lemons, halved
Fresh mint, for garnish

PREPARATION:

Method

  1. In a medium saucepan, bring 6 cups water to 190 degrees. Add tea bags and steep for 10 minutes. Remove the tea bags and set the brewed tea aside to cool slightly. In the meantime, in a large nonreactive glass jar with a lid, add the ginger, honey and peaches. Squeeze the juice from the lemon halves into the jar, add the lemons and cover the mixture with the steeped tea. Refrigerate until thoroughly chilled.
  2. To serve, fill tall glasses with ice, place a few chilled peach slices in each glass, pour
  3. chilled tea over the peaches and top with a sprig of mint.
