Emeril's Glazed Ham with Sweet Potatoes

YIELD 4-6 or 2 with leftovers!

INGREDIENTS

1 2‑pound boneless ham
1 pound sweet potatoes, peeled and cut into 2-inch chunks
1 cup molasses
1/2 cup brown sugar, packed

PREPARATION:

Method:

  1. Place the ham in a baking dish and surround with sweet potatoes.
  2. In a bowl, combine the molasses and the brown sugar. Stir to form a glaze. Pour glaze over ham. Place in the oven and bake for 45 minutes to 1 hour until ham is heated through and the glaze is bubbling. Let cool for 10 minutes before serving.

To Serve:

  1. Slice the ham and serve with sweet potatoes.
