Emeril's Grilled Baby Back Ribs

YIELD 6 servings

INGREDIENTS

1 cup Emeril's Essence or Creole seasoning
2 teaspoons salt
2 slabs baby back ribsVegetable oil, for grates (about 2 pounds total)

PREPARATION:

  1. In a small bowl, combine the Essence and salt. Rub slabs on both sides with the spice mixture. Stack slabs on a double layer of aluminum foil. Tightly wrap and refrigerate, loosely covered, for 2 hours.
  2. Heat grill to medium-high; lightly oil grates. Place the foil packets containing the ribs directly onto the grill. Cook the ribs for 15 minutes, then flip. Continue to cook another 15 minutes are until meat is tender. Serve ribs with your favorite barbecue sauce, if desired.
