Emeril's Grilled Pineapple with Soy-Agave Dipping Sauce
YIELD 6 to 8 Servings
INGREDIENTS
| 1 | ripe pineapple, peeled and cut crosswise into |
| 1?2‑inch | slices |
| 1 cup | soy yogurt |
| 2 tablespoons | agave nectar |
| 1 | Serrano pepper, minced |
| 1 teaspoon | lime zest |
| 1 teaspoon | lime juice |
| 1 teaspoon | mint |
PREPARATION:
- Heat a grill to medium high. Cook until softened and nicely marked by the grill, 1 to 3 minutes per side. Transfer to a serving platter and allow to cool slightly before serving.
- Combine all remaining ingredients in a small bowl and whisk to combine. Drizzle over the grilled pineapple before serving.
