Emeril's Grilled Sardines with Fresh Herb Sauce

YIELD 4 appetizer servings

INGREDIENTS

12 to 16 fresh whole sardines, cleaned, scaled, rinsed and dried
4 cloves chopped garlic
1 teaspoon sea salt
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh thyme, oregano, or marjoram leaves
2 tablespoons chopped fresh parsley leaves
1/2 cup extra-virgin olive oil
Freshly ground black pepper
(lemon thyme if available)

PREPARATION:

Method

  1. Place the sardines on a large plate. Sprinkle the garlic, sea salt, lemon juice, thyme and parsley over the sardines and let marinate in the refrigerator for 20 minutes.
  2. Preheat a grill pan or broiler to high. Drizzle the oil over the sardines, sprinkle with pepper and place them directly on the grill pan and cook, turning once, until the skin is crispy and lightly charred, 2 to 3 minutes per side, depending on the size of the fish. Transfer the fish to a serving platter and serve immediately.
