Emeril's Grilled Skirt Steak

INGREDIENTS

1 2‑pound skirt steak, trimmed of excess fat
Ground black pepper, to taste
1 tablespoon herbed French sea salt
1/4 cup olive oil

PREPARATION:

Method:

  1. Prepare grill.
  2. To a non reactive dish, add steak, ground pepper, salt and olive oil. Turn to coat. Let marinate for 20 minutes to an hour. Place on grill and let cook, 4 minutes per side for medium rare.
  3. Remove from grill to a plate, tented with foil for 10 minutes. Slice on the bias and serve.
