Emeril's Herbed Oil
YIELD 1 quart
INGREDIENTS
| 1 quart | McEvoy Ranch traditional blend olive oil or other good quality olive oil |
| 1 bunch, | about 5 sprigs, rosemary |
| 2 | sprigs oregano |
| 2 | sprigs thyme |
| 1 | bay leaf |
| 1 | lemon, zested |
| ΒΌ teaspoon | red pepper flakes |
PREPARATION:
Method
- In a medium saucepan, combine all ingredients and bring up to a simmer. Turn off heat as soon as the oil reaches a simmer. Allow the herbs and spices to steep for at least 20 minutes. At this point the oil may be strained and stored in a clean glass bottle. Alternatively, the oil may be stored with the herbs.
