Emeril's Lemony Roasted Broccoli

YIELD 8 servings

INGREDIENTS

12 cups broccoli florets
1/4 cup extra-virgin olive oil
1 ½ teaspoons salt, or to taste
Freshly ground pepper
1 cup Panko bread crumbs
1 cup Parmesan cheese
1 teaspoon lemon zest
2‑3 teaspoons lemon juice
(about 3 heads)

PREPARATION:

Method

  1. Preheat oven to 450 degrees F.
  2. Heat a baking sheet greased with 1 tablespoon olive oil in a preheated oven.
  3. Toss broccoli with remaining 3 tablespoons olive oil. In a small bowl combine the salt,
  4. pepper, bread crumbs, Parmesan, lemon zest and lemon juice. Place the broccoli on the preheated
  5. baking sheet and then sprinkle the top with the bread crumb mixture. Roast until the
  6. broccoli is tender and browned, 15 minutes.
