Emeril's Lemony Roasted Broccoli

INGREDIENTS
| 12 cups | broccoli florets |
| 1/4 cup | extra-virgin olive oil |
| 1 ½ teaspoons | salt, or to taste |
| Freshly ground pepper | |
| 1 cup | Panko bread crumbs |
| 1 cup | Parmesan cheese |
| 1 teaspoon | lemon zest |
| 2‑3 teaspoons | lemon juice |
PREPARATION:
Method
- Preheat oven to 450 degrees F.
- Heat a baking sheet greased with 1 tablespoon olive oil in a preheated oven.
- Toss broccoli with remaining 3 tablespoons olive oil. In a small bowl combine the salt,
- pepper, bread crumbs, Parmesan, lemon zest and lemon juice. Place the broccoli on the preheated
- baking sheet and then sprinkle the top with the bread crumb mixture. Roast until the
- broccoli is tender and browned, 15 minutes.
