Emeril's Lobster Rolls With Lemon Juice
YIELD 4 servings
INGREDIENTS
| 1/2 cup | finely chopped red onion |
| 1/2 cup | finely chopped celery |
| 2 teaspoons | lemon juice |
| 2 teaspoons | mayonnaise |
| ground black pepper to taste | |
| salt to taste | |
| 1 pint | cooked lobster meat, chopped |
| 4 large | leaves, Bibb lettuce |
| 4 | hamburger or brioche rolls |
PREPARATION:
- In a large bowl, combine all ingredients except rolls and lettuce. Stir to combine and spoon into buns. Top each sandwich with a lettuce leaf and serve immediately.
