Emeril's Lobster Rolls With Lemon Juice

YIELD 4 servings

INGREDIENTS

1/2 cup finely chopped red onion
1/2 cup finely chopped celery
2 teaspoons lemon juice
2 teaspoons mayonnaise
ground black pepper to taste
salt to taste
1 pint cooked lobster meat, chopped
4 large leaves, Bibb lettuce
4 hamburger or brioche rolls

PREPARATION:

  1. In a large bowl, combine all ingredients except rolls and lettuce. Stir to combine and spoon into buns. Top each sandwich with a lettuce leaf and serve immediately.
