Emeril's Local Sweet Corn

YIELD 4 servings

INGREDIENTS

2 quarts water
4 ears corn, shucked, and cut in half
2 tablespoons salt, plus more for seasoning
Freshly ground black pepper

PREPARATION:

  1. In a large pot over high heat, bring the water to a boil. Add the salt and corn and cook for 4 minutes, or until crisp tender. Drain the corn and serve with a sprinkle of salt and pepper to taste.
