Emeril's Local Sweet Corn
YIELD 4 servings
INGREDIENTS
| 2 quarts | water |
| 4 | ears corn, shucked, and cut in half |
| 2 tablespoons | salt, plus more for seasoning |
| Freshly ground black pepper | |
PREPARATION:
- In a large pot over high heat, bring the water to a boil. Add the salt and corn and cook for 4 minutes, or until crisp tender. Drain the corn and serve with a sprinkle of salt and pepper to taste.
