Emeril's Mixed Baby Greens With Goat Cheese and Balsamic-Lager Dressing

INGREDIENTS

2 tablespoons beer (Lager or Raspberry Wheat Ale)
1 tablespoon apple cider vinegar
1 tablespoon balsamic vinegar
1 teaspoon shallots, minced
1 teaspoon Dijon mustard
¼ teaspoon dried thyme leaves
¼ teaspoon salt
1/8 teaspoon ground black pepper
3/4 cup grapeseed oil
4 cups baby greens
4 ounces goat cheese
½ cup raspberries

PREPARATION:

  1. In a small bowl whisk together beer, apple cider, balsamic, shallots, Dijon, thyme, salt and pepper. Slowly drizzle in the grapeseed oil. Set aside until ready to use.
  2. In a large bowl toss together the baby green with enough of the dressing to coat the greens.
  3. To serve. Divide greens among 4 cold salad plates. Top with one ounce of goat cheese and several raspberries. Serve with remaining dressing on the side.
