Emeril's Mixed Baby Greens With Goat Cheese and Balsamic-Lager Dressing

INGREDIENTS
| 2 tablespoons | beer (Lager or Raspberry Wheat Ale) |
| 1 tablespoon | apple cider vinegar |
| 1 tablespoon | balsamic vinegar |
| 1 teaspoon | shallots, minced |
| 1 teaspoon | Dijon mustard |
| ¼ teaspoon | dried thyme leaves |
| ¼ teaspoon | salt |
| 1/8 teaspoon | ground black pepper |
| 3/4 cup | grapeseed oil |
| 4 cups | baby greens |
| 4 ounces | goat cheese |
| ½ cup | raspberries |
PREPARATION:
- In a small bowl whisk together beer, apple cider, balsamic, shallots, Dijon, thyme, salt and pepper. Slowly drizzle in the grapeseed oil. Set aside until ready to use.
- In a large bowl toss together the baby green with enough of the dressing to coat the greens.
- To serve. Divide greens among 4 cold salad plates. Top with one ounce of goat cheese and several raspberries. Serve with remaining dressing on the side.
