Emeril's Mojito

YIELD 4 Mojitos

INGREDIENTS

4 limes
½ cup superfine sugar
1 cup mint leaves
1½ quarts ice
1 1/2 cups light white rum
Lime slices or sugarcane swizzle sticks, for garnish, optional

PREPARATION:

Method

  1. Cut each lime in half and place into a large pitcher. Sprinkle the sugar over the limes and toss in the mint leaves. Using a muddler (or the butt end of a large wooden spoon), mash the limes into the base of the pitcher until the sugar is dissolved and the mixture is well mixed. Add the ice, pour in the rum and stir to incorporate all the ingredients. Garnish with a slice of lime or a sugarcane swizzle stick if desired.
