Emeril's Oil Poached Tuna Penne

INGREDIENTS

1 cup extra virgin olive oil or reserved oil from poached tuna
1 pound small heirloom tomatoes or cherry tomatoes, cut in half
1 teaspoon crushed garlic
½ teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper to taste
1 pound penne pasta cooked al dente, 1 cup pasta cooking water reserved
½ cup basil leaves
Olive Oil Poached Tuna, flaked and oil reserved
Parmigiano-Reggiano, for garnish

PREPARATION:

Method

  1. In a large sauté pan over medium, add the olive oil. Next add the tomatoes, garlic, red pepper flakes, and a pinch of salt and pepper. When the tomatoes begin to slightly wilt, add the pasta and toss to combine. Increase the heat to medium high and add the pasta water. Add the basil leaves and tuna and toss to combine. Serve the pasta in a large, family style warmed bowl with Parmigiano-Reggiano and reserved tuna oil to garnish.
