Emeril's Oven Roasted Green Beans with Pecans
YIELD 4 to 6 servings
INGREDIENTS
| 1 1/2 pounds | green beans |
| 1 cup | pecan pieces |
| 2 tablespoons | extra-virgin olive oil |
| 1 tablespoon | lemon zest |
| 1 teaspoon | kosher salt |
| 1/2 teaspoon | freshly ground black pepper |
PREPARATION:
- Preheat the oven to 425 degrees F.
- Trim the ends of the green beans and add to a large bowl along with the pecan pieces. Toss with the extra-virgin olive oil, lemon zest, salt and pepper. Spread out evenly on a parchment lined baking sheet.
- Roast, until lightly caramelized and crisp tender, about 12 to 14 minutes.
