Emeril's Oven Roasted Green Beans with Pecans

YIELD 4 to 6 servings

INGREDIENTS

1 1/2 pounds green beans
1 cup pecan pieces
2 tablespoons extra-virgin olive oil
1 tablespoon lemon zest
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

PREPARATION:

  1. Preheat the oven to 425 degrees F.
  2. Trim the ends of the green beans and add to a large bowl along with the pecan pieces. Toss with the extra-virgin olive oil, lemon zest, salt and pepper. Spread out evenly on a parchment lined baking sheet.
  3. Roast, until lightly caramelized and crisp tender, about 12 to 14 minutes.
