Emeril's Peas With Tomatoes

YIELD 4 to 6 servings

INGREDIENTS

1 8‑ounce package frozen peas
1 teaspoon unsalted butter
1 pint cherry or grape tomatoes
1/4 cup chopped mint

PREPARATION:

Method:

  1. In a large sauté pan over medium heat, add frozen peas and butter. After a minute or so, add the tomatoes. Season with salt and pepper and cook until heated through, about 5 minutes. Garnish with mint and serve immediately.
