Plantain Chips

YIELD 4 to 6 servings

INGREDIENTS

2 quarts peanut oil
2 green plantains, peeled, cut very thinly on a bias,
1/8 inch thick

PREPARATION:

  1. Set a large 6-quart stockpot or Dutch oven over medium-high heat and add the peanut oil. Heat the oil to 350 degrees F. Fry the plantains in batches until golden brown and crispy, about 2 minutes. Transfer to a paper towel lined platter and season lightly with salt. Serve immediately.
