Emeril's Preserved Lemon Slaw

INGREDIENTS

I pound shredded cabbage, red and green
1 red onion, sliced
1 preserved lemon, cut into segments
¼ cup chopped dill
¼ cup red wine vinegar
1 tablespoon ground cumin
¼ cup olive or sesame oil
Salt and freshly ground pepper

PREPARATION:

  1. In a large bowl, add all ingredients and toss to combine. Season with salt and pepper and serve immediately.
