Emeril's Quick French Lentils

YIELD 4 servings

INGREDIENTS

carrot, finely chopped
stalk celery, finely chopped
1/4 cup onion, finely chopped
Salt and freshly ground black pepper
1 cup  French green lentils, rinsed
1 cup  chicken stock

PREPARATION:

  1. In a medium saucepan, combine the carrot, celery, and onion. Cook until vegetables are soft. Add the lentils and chicken stock. Bring to a boil. Reduce the heat to medium-low and simmer until just tender yet still firm, 15 to 20 minutes.
  2. Serve warm or at room temperature.
