Emeril's Quick French Lentils
YIELD 4 servings
INGREDIENTS
| 1 | carrot, finely chopped |
| 1 | stalk celery, finely chopped |
| 1/4 cup | onion, finely chopped |
| Salt and freshly ground black pepper | |
| 1 cup | French green lentils, rinsed |
| 1 cup | chicken stock |
PREPARATION:
- In a medium saucepan, combine the carrot, celery, and onion. Cook until vegetables are soft. Add the lentils and chicken stock. Bring to a boil. Reduce the heat to medium-low and simmer until just tender yet still firm, 15 to 20 minutes.
- Serve warm or at room temperature.
