Emeril's Red Wine Vinaigrette

YIELD About 2 cups

INGREDIENTS

1/2 cup red wine vinegar
1 1/2 teaspoons Dijon mustard
2 tablespoons minced shallots
2 tablespoons minced mixed herbs
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 cups olive oil

PREPARATION:

  1. Combine the red wine vinegar, Dijon mustard, shallots, herbs, salt and pepper in a mixing bowl and whisk to combine. Allow to sit for 5 minutes.
  2. While whisking, add the oil in a thin, steady stream until combined. Taste and adjust seasoning if necessary.
