Emeril's Roasted Asparagus
YIELD 4 servings
INGREDIENTS
| 1 | pound large asparagus, trimmed |
| 2 | tablespoons extra-virgin olive oil |
| Salt and freshly ground black pepper to taste | |
PREPARATION:
- Preheat oven to 400ยบ F.
- In a medium sized baking dish, lay asparagus flat and drizzle with olive oil. Season with salt and pepper and place in oven for 8 to 10 minutes, until just tender.
