Emeril's Roasted Broccolini
YIELD 4 servings
INGREDIENTS
| 3 tablespoons | olive oil |
| 1 pound | broccolini, woody portion of stem removed |
| 4 ounces | shitake mushrooms, stemmed and sliced |
| 2 | roma tomatoes, quartered |
| 1 | lemon, juiced |
| 2 tablespoons | feta cheese, crumbled |
PREPARATION:
- Preheat oven to 400ºF.
- Lay broccolini in single layer in a baking dish. Top with shiitakes and tomatoes. Drizzle with lemon juice, olive oil, salt and pepper
- Roast for 20 minutes. Remove from oven, sprinkle with feta cheese. Serve immediately.
