Emeril's Roasted Broccolini

YIELD 4 servings

INGREDIENTS

3 tablespoons olive oil
1 pound broccolini, woody portion of stem removed
4 ounces shitake mushrooms, stemmed and sliced
2 roma tomatoes, quartered
1 lemon, juiced
2 tablespoons feta cheese, crumbled

PREPARATION:

  1. Preheat oven to 400ºF.
  2. Lay broccolini in single layer in a baking dish. Top with shiitakes and tomatoes. Drizzle with lemon juice, olive oil, salt and pepper
  3. Roast for 20 minutes. Remove from oven, sprinkle with feta cheese. Serve immediately.
