Emeril's Roasted Sweet Potatoes
INGREDIENTS
| 4 1/2 pounds | sweet potatoes, peeled and cubed into 2 inch chunks |
| Olive oil | |
| Salt and pepper | |
PREPARATION:
Method
- Preheat oven to 375 degrees F. Arrange the sweet potatoes on a parchment paper-lined baking sheet. Drizzle with olive oil and toss to coat well and season with 1/2 teaspoon salt, and pepper to taste. Transfer to the oven and cook until soft, turning once midway through baking, about 40 minutes total.
For the baby, puree sweet potatoes in a blender and serve.
