Emeril's Salt-free Lemon Vinaigrette

INGREDIENTS

2 tablespoons  chopped assorted fresh herbs, such as parsley, chives, tarragon, basil, cilantro and oregano
1 tablespoon minced shallots
1 teaspoon minced garlic
Zest of 1 lemon
Zest of 1 lime
1 tablespoon Dijon mustard
2 tablespoons lemon juice
¼ cup grapeseed oil

PREPARATION:

  1. Combine the herbs, shallots, garlic, zests, mustard and lemon juice in a medium bowl and whisk to blend. Slowly add the oil in a steady stream, whisking constantly until the mixture thickens.
