Emeril's Salt-free Lemon Vinaigrette
INGREDIENTS
| 2 tablespoons | chopped assorted fresh herbs, such as parsley, chives, tarragon, basil, cilantro and oregano |
| 1 tablespoon | minced shallots |
| 1 teaspoon | minced garlic |
| Zest of 1 lemon | |
| Zest of 1 lime | |
| 1 tablespoon | Dijon mustard |
| 2 tablespoons | lemon juice |
| ¼ cup | grapeseed oil |
PREPARATION:
- Combine the herbs, shallots, garlic, zests, mustard and lemon juice in a medium bowl and whisk to blend. Slowly add the oil in a steady stream, whisking constantly until the mixture thickens.
