YIELD 8 appetizer portions

INGREDIENTS

2 (6‑ounce) tilapia fillet, chopped into 1/2-inch pieces
2 jalapenos, thinly sliced
1 red onion, finely chopped
2 tomatillos, finely chopped
1 can heart of palms, chopped
2 cups Satsuma orange juice (freshly squeezed orange juice)
1 cup lime juice
1 cup coconut water
1/2 cup chopped cilantro
Salt and pepper to taste

PREPARATION:

Method:

  1. Combine all ingredients in a large, non-reactive bowl. Stir to combine and place in the refrigerator for at least two hours. Serve in decorative bowls or coconut shells.
