Sauteed Broccoli Rabe
INGREDIENTS
| 2 pounds | broccoli rabe, trimmed and rinsed |
| 2 tablespoons | olive oil |
| 2 cloves | minced garlic |
| 1 teaspoon | red pepper flakes |
| Salt and pepper | |
| 1 | lemon, zested |
| 2 tablespoons | grated Parmesan Cheese |
PREPARATION:
- Bring a large pot of salted water to a boil. Drop broccoli rabe into boiling water for 1 to 3 minutes until tender and bright green. Drain well in a colander and set aside.
- In a large sauté pan heat olive oil over medium heat. Add the garlic and red pepper flakes, sauté for 30 seconds. Add the broccoli rabe and heat through. Season with salt and pepper. Top with the lemon zest and Parmesan cheese. Serve immediately.
