Emeril's Spiced Turkey Breast

YIELD 6 servings

INGREDIENTS

1 2‑pound breast of turkey, trussed or netted
1 tablespoon vegetable oil
recipe Shonta's Southwest Spice

PREPARATION:

  1. Preheat the oven to 425 degrees.
  2. Set turkey breast on a heavy duty baking dish. Drizzle the turkey with the oil and sprinkle evenly on all sides with Shonta's Southwest Spice. If you have a heavy cast iron skillet or tinfoil covered brick, place it on the turkey breast to help flatten it. Place the turkey into the oven for 1 hour or until a meat thermometer inserted into the thickest part of the breast reads 170 degrees.
  3. Serve immediately.
