Emeril's Spiced Turkey Breast
YIELD 6 servings
INGREDIENTS
| 1 2‑pound | breast of turkey, trussed or netted |
| 1 tablespoon | vegetable oil |
| 1 | recipe Shonta's Southwest Spice |
PREPARATION:
- Preheat the oven to 425 degrees.
- Set turkey breast on a heavy duty baking dish. Drizzle the turkey with the oil and sprinkle evenly on all sides with Shonta's Southwest Spice. If you have a heavy cast iron skillet or tinfoil covered brick, place it on the turkey breast to help flatten it. Place the turkey into the oven for 1 hour or until a meat thermometer inserted into the thickest part of the breast reads 170 degrees.
- Serve immediately.
