Emeril's Spinach Saute With Garlic And Onions

YIELD 2 servings

INGREDIENTS

2 tablespoons olive oil
1 small white onion, chopped
2 cloves garlic, smashed
1 pound baby spinach, washed and rinsed
Salt and freshly ground black pepper
2 teaspoons soy sauce

PREPARATION:

  1. In a large sauté pan over medium heat, add the olive oil. When the oil begins to shimmer, add the onions and garlic and cook until they begin to become soft, about 3 minutes. Next add the spinach in 2 additions, seasoning each with salt and pepper. Once all of the spinach has been added, sprinkle with the soy sauce and turn off the heat.

    Serve immediately.
