Emeril's Steamed Asparagus With Vidalia Onions (Video)

YIELD 4 to 6 servings

INGREDIENTS

2 tablespoons olive oil
1 large onion, sliced
2 cloves garlic, sliced
1 pound asparagus, ends trimmed
1/4 cup chicken stock
Salt and freshly ground black pepper

PREPARATION:

Method:

  1. In a large saute pan over high heat, add the olive oil. Then, add the onion and garlic. After a minute or so, add the asparagus in a single layer. Pour the chicken stock over the asparagus, season with salt and pepper and cover. Steam for 8 to 10 minutes or until the asparagus is crisp tender. Serve immediately.
