Emeril's Steamed Asparagus With Vidalia Onions (Video)
YIELD 4 to 6 servings
INGREDIENTS
| 2 tablespoons | olive oil |
| 1 | large onion, sliced |
| 2 | cloves garlic, sliced |
| 1 pound | asparagus, ends trimmed |
| 1/4 cup | chicken stock |
| Salt and freshly ground black pepper | |
PREPARATION:
Method:
- In a large saute pan over high heat, add the olive oil. Then, add the onion and garlic. After a minute or so, add the asparagus in a single layer. Pour the chicken stock over the asparagus, season with salt and pepper and cover. Steam for 8 to 10 minutes or until the asparagus is crisp tender. Serve immediately.
