Emeril's Sweet Potato Mash

YIELD 6 side servings

INGREDIENTS

3 large sweet potatoes, diced
2 cups coconut milk
2 teaspoons ground cinnamon
1 teaspoon ground allspice
1 tablespoon ground cumin
Salt and freshly ground pepper

PREPARATION:

  1. In a medium saucepan over medium high heat, add the sweet potato, coconut milk, spices and season with salt and pepper. Bring to a low boil, reduce the heat to medium low and simmer for 20 minutes. Turn off the heat and mash the potatoes until they reach a slightly lumpy consistency. Serve immediately.
