Emeril's Vanilla-Scented Fruit Salad
YIELD 1 cup syrup, 11 cups fruit salad
INGREDIENTS
| 1 cup | agave nectar |
| 1 | vanilla bean, split and scraped |
| Juice and zest of 1 lemon | |
| 2 cups | diced cantaloupe |
| 1 1/2 cups | diced pineapple |
| 1 1/2 cups | sliced strawberries |
| 1 container (6 oz.) | raspberries |
| 1 container (5.6 oz.) | blackberries |
| 2 | peaches, cored and diced |
| 1 cup | blueberries |
| 1 cup | red grapes |
| 1/4 cup | mint leaves |
PREPARATION:
- In a small saucepan over low heat, heat agave nectar and vanilla bean very slowly until hot and vanilla is aromatic. Cool completely, then remove vanilla bean and stir in lemon juice and zest.
- In a large bowl, combine all the fruit. Chiffonade mint leaves and add to fruit along with 1/2 cup agave syrup. Stir to combine, cover and refrigerate for at least 1 hour before serving.
