Emeril's Whole Wheat Ciabatta Pizzas
YIELD 4 servings
INGREDIENTS
| 1/3 pound | fresh turkey sausage, removed from casings, crumbled |
| 2 teaspoons | olive oil |
| 4 ounces | button mushrooms, ends trimmed, sliced |
| 1 | whole-wheat Ciabatta bread |
| 1 cup of | your favorite marinara sauce |
| 4‑ounces | thinly sliced fresh mozzarella cheese |
| 1/4 cup | finely grated Parmesan cheese |
| Crushed red pepper | |
PREPARATION:
- Preheat the oven to 325 degrees Fahrenheit and position the oven rack in the center position. In a medium nonstick skillet, cook the sausage over medium high heat with the olive oil until well browned and cooked through, 3 to 4 minutes. Remove the turkey sausage with a slotted spoon andset aside. To the same pan, add the mushrooms and season lightly with salt. Cook until lightly golden, about 3 minutes. Set aside.
- Slice through the bread horizontally. Using your fingers, gently scoop out and discard most of the soft, bready interior portion of the bread, leaving a 1/2-inch shell. Spread 2 tablespoons of the marinara sauce evenly onto each of the bread shells. Divide the cooked turkey sausage and mushrooms among the bread slices, then top each with 2 tablespoons of the remaining sauce. Divide the sliced mozzarella evenly amongst the tops of the pizzas, then sprinkle the Parmesan evenly over each. Place the pizzas on a baking sheet and bake until the filling is heated through and cheese is melted, 16 to 18 minutes. If you like, you can sprinkle with crushed red pepper either before or after baking.
