Emeril's Ricotta Parfaits
YIELD 4 servings
INGREDIENTS
| 2 cups | part-skim ricotta |
| ¼ cup | honey, plus more for garnish |
| 2 cups | mixed berries, such as strawberries, blueberries, blackberries and raspberries |
| ¼ cup | good quality extra virgin olive oil |
| Mint leaves for garnish | |
PREPARATION:
Method
- In a medium sized bowl, combine the ricotta, ¼ cup of honey and olive oil. Stir to combine. Separate the fruit into four serving glasses. Top each with a quarter of the ricotta mixture and drizzle with honey. Garnish with mint and serve immediately.
Editor's Note: Look for organic ricotta and local honey.
