Emeril's Ricotta Parfaits

YIELD 4 servings

INGREDIENTS

2 cups part-skim ricotta
¼ cup honey, plus more for garnish
2 cups mixed berries, such as strawberries, blueberries, blackberries and raspberries
¼ cup good quality extra virgin olive oil
Mint leaves for garnish

PREPARATION:

Method

  1. In a medium sized bowl, combine the ricotta, ¼ cup of honey and olive oil. Stir to combine. Separate the fruit into four serving glasses. Top each with a quarter of the ricotta mixture and drizzle with honey. Garnish with mint and serve immediately.

    Editor's Note: Look for organic ricotta and local honey.
